An abbreviated post from me on this one because I am a few weeks late on this one. This came up the weekend before I was travelling for work and I just did not have the bandwidth. Then, during rewind week, I was beat from the trip. So here we are. Finally, at least. I almost decided to pass on this until a much later date because I wanted to pick up some small cake rings and make mini cakes out of this.
For me, I made this according to the recipe, but I found it very one note in flavor, which made it very rich for me. I eat a few bites and then stop because I am tired of eating it.
Doing this again, this cake needs something else. Something very brightly flavored with it. And you need something that will stand up to the cake (if you look to swap out the filling) because the individual layers are so dense that when you cut it, you risk squeezing out your layers. I might freeze two rounds of coffee ice cream for the mid-layers, and then do a passionfruit coulis. Even just a Raspberry coulis on the side would help this… which makes me wish I had not forgotten to pick up raspberries as the store this weekend.
